Crepe pistachio halawa

Pistachio Halawa Crepe Cake: A Delicate Middle Eastern-Inspired Dessert

There is something wonderfully indulgent about a dessert made from layers and layers of thin, delicate crepes. Add creamy pistachio, the nutty richness of halawa, and a generous sprinkle of roasted pistachios, and you have a dessert that feels both luxurious and surprisingly light.

This Pistachio Halawa Crepe Cake combines classic French-style crepes with flavors inspired by the Middle East. Each thin crepe is layered with a smooth pistachio and halawa cream, creating a beautiful cake with dozens of delicate layers.

The result is creamy, nutty, slightly sweet, and full of pistachio flavor—without the heaviness of a traditional frosted cake.

Why You’ll Love This Pistachio Crepe Cake

The beauty of this dessert is in its simplicity.

The crepes themselves are thin and tender, while the filling provides most of the flavor. Pistachio cream brings a rich, naturally nutty taste, while finely crumbled halawa adds a subtle sesame flavor and a wonderfully distinctive texture.

A final topping of chopped pistachios gives the cake a satisfying crunch.

And because the filling is spread in thin layers rather than thick layers, the finished cake doesn’t feel overly bulky or heavy.

What Is Halawa?

Halawa, also called halva, is a traditional Middle Eastern confection typically made with tahini (sesame paste) and sugar.

It has a rich, nutty flavor and a distinctive crumbly texture. When incorporated into a creamy filling, it adds depth and gives this crepe cake its unique Middle Eastern character.

For this recipe, choose a good-quality tahini-based halawa and crumble it finely before mixing it into the filling.

How to Make Pistachio Halawa Crepe Cake

1. Prepare the Crepe Batter

Start by whisking together the flour, sugar, and salt in a large bowl.

Add the eggs and gradually whisk in the milk. Add the melted butter and vanilla extract, if using.

Whisk until the batter is completely smooth and fairly thin. A thin batter is essential because you want delicate crepes rather than thick pancakes.

Allow the batter to rest for 20–30 minutes. This gives the flour time to hydrate and helps produce softer, more delicate crepes.

2. Cook the Crepes

Heat a non-stick skillet over medium heat and lightly grease it if necessary.

Pour a small amount of batter into the center of the pan and immediately swirl the pan to spread it into a very thin circle.

Cook for approximately 1–2 minutes, until the edges begin to lift and the underside is lightly golden.

Flip and cook the other side briefly.

Repeat until all the batter has been used. You should have approximately 12–15 thin crepes.

Allow them to cool completely before assembling the cake.

3. Prepare the Pistachio Halawa Cream

Pour the cold heavy cream into a bowl and whip it with the powdered sugar until soft peaks form.

Gently fold in the pistachio cream.

Add the finely crumbled halawa and fold until evenly incorporated.

The filling should be smooth, creamy, and easy to spread.

Tip: Don’t overwork the filling. You want to keep it light and creamy rather than dense.

4. Assemble the Cake

Place one crepe on your serving plate.

Spread a very thin, even layer of pistachio-halawa cream over the surface.

Place another crepe on top and repeat.

Continue layering until you’ve used all the crepes and filling.

The secret to getting those beautiful defined layers is not to use too much filling between each crepe.

5. Chill the Cake

Place the assembled cake in the refrigerator for approximately 30 minutes.

This allows the filling to firm up slightly and makes the cake much easier to slice.

For an even cleaner presentation, you can chill it for longer.

6. Decorate

Before serving, spread a very thin layer of pistachio cream over the top.

Sprinkle generously with chopped pistachios and, if desired, a little crushed halawa.

For a fresh finish, add a few strawberry halves and small mint leaves.

The contrast between the creamy pistachio, golden crepes, red strawberries, and green pistachios makes this cake especially beautiful when served.

7. Slice and Serve

Use a sharp knife to cut the cake into wedges.

Wipe the knife between cuts for the cleanest presentation and to reveal the beautiful layers.

Serve chilled or slightly cool.
